Chocolate Cherry Coconut Cake Pops

Sooo, last week was pretty full. We had a team breakfast on Friday and it was super yummy. As we had a lot of little events we wanted to celebrate – two years at the company for me, yay – we all brought a little something to share. I made vegan chocolate cherry cake pops. The best thing: the look on my colleague’s face when I told him they were vegan. “No milk, no eggs?” “Nope.” “Ummm, and what’s in them?” Well, that, my friends, is something I would like to share with all of you. So here’s the recipe for our little delight.


Ingredients (makes about 40 cake pops):
270 g flour
30 g cocoa powder
2 tbsp. of baking powder
180 g sugar
8 g vanilla sugar
¼ tsp. salt
210 ml water
5 tbsp. soy oil
150 g cherries
50 g chocolate chips
about 200 g of dark chocolate
shredded coconut for decoration

Preparation:

Plug in your cake pop maker and let it heat up a little bit.

Mix flour, cocoa powder, baking powder, sugar, vanilla sugar, and salt in a large bowl. Use a large spoon, no whisk or hand mixer.

Add water and oil. Stir just enough so that everything is mixed well. Add cherries and chocolate chips and stir again. Not too long.

Grease the cake pop maker with a brush and just a little bit of oil.

Now, using two teaspoons fill the cake mixture into the little holes in your cake pop maker. Every device is a little different, so you have to try how much mixture you can put into your maker. The first round was difficult for me, because I was very careful not to put too much cake mix in the holes. Well, the little cake balls came out really ugly… So, the next time I used more dough and it worked. So, just play around a little bit. You’ll know best what your cake pop maker can handle.

Let the cake balls bake for about 8 minutes. Do not open the cake pop maker too often during the process.

Check the cake balls, using a tooth pick. If it comes out clean, you can take out the little cakes. Let them cool on a plate. Yup, it’s that simple. You can just let them cool on a plate.

Repeat until all the cake mixture is used up. Let the cake balls cool completely.

Now it’s time to decorate. Melt the dark chocolate in a bowl. Put the shredded coconut in a bowl. Be prepared and just put them right next to each other. That way it’s easy to decorate. Now, put your cake balls on sticks, and turn them into cake pops. Dip them in the chocolate. Wait until no more chocolate drips down. Sprinkle the cake pops with coconut. Let them dry in a stand. You can make your own by using styrofoam. Or put your colander upside down and use the little holes as a cake pop stand. So many possibilities!


Hoot, hoot! Making the cake pops takes a little while. I made them one day and decorated them the next. Depends on how much time you want to spend in the kitchen. I had to make them in the evening after work, so eventually I just got tired… But, hey, maybe you have more energy than me. Have fun and make your friends happy with this little treat! They’re fun for Halloween, too. You can use orange decoration or colorful sprinkles. Just be creative.
