today was a good day. I woke up to Poldi's sneeze, but he is still doing much better. Tonight, he was my little side kick again. Meowing and meowing while I was in the kitchen, cooking dinner. I wanted something quick, but also something healthy, so I came up with this dish. It's very aromatic, has some super food ingredients, and it's so pretty. All colorful. I like it. Hope you do, too.
1/2 a sweet onion
1 garlic clove
1 red bell pepper
1 orange bell pepper
1 green bell pepper
1 orange
1 can of coconut milk (400 ml)
1 can of chick peas (drained weight: 240 g)
about 3 tbsp. of cashews(whole)
1 tbsp. of curry leaves
1/2 tsp. of thyme (dried)
1/2 tsp. of basil (dried)
1/2 tsp. of oregano (dried)
1 tsp. of turmeric
salt, pepper
cherry tomatoes and spring onions to garnish
Preparation:
Peel and cut the sweet onion. Heat olive oil in a large pan and add onions. Let them brown slightly.
Peel and cut garlic. Add to the onion and fry for about 3 minutes on high heat until everything is browned a little bit more.
Wash and cut the peppers into small pieces. Add to the onion and garlic. Fry for another 5 minutes, stir occasionally.
Peel and cut the orange into small pieces. Be careful to save the juice and don't let it go to waste. Add the orange pieces and the juice to the veggies in the pan. Stir well. Let cook for about 3 minutes.
Add the coconut milk and stir everything well.
Rinse chick peas, then add them to the veggies in the coconut milk. Stir well again.
Chop the cashews, but they don't have to be very small. Add them to pan. Stir well.
Now add the curry leaves, thyme, basil, oregano, turmeric and stir well. Add salt and pepper to taste.
Let cook for about 15 minutes.
Put the Coconut Orange Veggies into a bowl and garnish with fresh spring onions and tomatoes, if you like. Enjoy!
Hoot, hoot! With the nice spices and herbs, this dish will probably taste even better on the second day. I made it ahead for tomorrow, but tried some of it today as well. Yummy! So happy to have dinner waiting for me tomorrow night when I get home after my yoga class. Oh, the small things that make me happy...
