It’s
November and that means in my world: It’s time to make cookies. I love
decorations and baking for Christmas, so of course I have some cute cookie
cutters. And I just wanted to try them out. This one is new and it was so much
fun to use it. In the end, who doesn’t just love penguins? Well, I don’t wanna
know… You just have fun now! PENGUINS!
160 g flour
100 g
ground almonds
1 package
(about 40 g) pudding powder (I used almond)
200 g sugar
120 g
margarine
2 Tbsp.
coconut oil
Dark
chocolate to decorate
Preparation:
First mix
flour with ground almonds and the pudding powder. Then add the sugar and mix
well.
Using a
spoon, add the margarine as small chunks, not the whole 120 g in one big block.
Put some
flour on your hands and start kneading. It takes a while for the ingredients to
stick together, so just keep going.
When you are
almost done, add the coconut oil and the dough will have a nice texture.
Now you can
start rolling out the dough with a rolling pin. I have a cute little penguin
cookie cutter so these are penguin cookies, but feel free to use which ever
cutters you have. Just have fun. You’re making cookies after all. J
Put the
cookies on a baking tray and leave enough space between them, so they won’t
stick together.
Put them in
the oven at 180°C for about 12 minutes. Check on them from time to time. When
they start to turn golden-brown around the edges, they are done. You can take
them out of the oven now.
Let the
cookies cool for a while.
In the
meantime, melt the dark chocolate to decorate the cookies. When they are
completely cooled down, dip the bottom of the cookies in the chocolate. Repeat
with every cookie. Let them dry.
When they
are dry, it is time to decorate the front of the cookies (look at the picture
for help). I used a brush. Just give it a try. You might have other ideas, so please
use whatever works best for you. In the end, use a tooth pick, dip it in the
chocolate, and paint eyes on the penguins.

all done. So cute.
Hoot, hoot! These cookies take a little while
to make. I used half of the dough yesterday evening, then wrapped the other
half in plastic wrap and put it in the fridge. I took it out today, let it sit
for about half an hour and then made the next batch. Have fun!
