Tomato Coconut Orange Soup

So many things have been going on and when life gets hectic, you just want your food to be simple yet delicious. That’s why I came up with this soup. It can be put together in just five minutes and then you can let it simmer for 20 minutes, while you just relax on the couch and watch your favorite show, a movie or just cuddle up with your pets. Mmmmh, nice.


Ingredients:
1 can (400g) diced tomatoes (in tomato juice)
1 packet (500 g) tomato puree
1 can (400 ml) coconut milk
Juice of 1 orange
1 Tbsp. curry powder
1 tsp. oregano (dried)
1 tsp. thyme (dried)
1 tsp. marjoram (dried)
1 tsp. apple sweetener
3 Tbsp. chives
Salt to taste
Shredded coconut (garnish)

Preparation:
In a large saucepan, put together the tomatoes, tomato puree, and coconut milk. Stir well.

Juice the orange and add it to the tomatoes and coconut milk. If you like, you can scrape a little bit of the pulp into the mix as well.

Add the curry powder, oregano, thyme, marjoram, apple sweetener, and chives. Stir well. Add some salt to taste.

Let the soup simmer for about 20 minutes.

After 20 minutes, try the soup and add some more salt to taste.

Put it in your favorite bowl, sprinkle some shredded coconut on top, and enjoy.  Mmmmmh.

Hoot, hoot! The soup tastes even better on the next day. I like to take leftovers to work for lunch. It’s very light and doesn’t leave you bloated for the rest of the day like some other meals do. Try it with some ciabatta.
